MPhil. Food Science and Technology in KNUST; The course is primarily intended to provide advanced food research training. The candidates get knowledge of the principles of food research as well as novel methodologies. These graduates are expected to demonstrate excellent coherent analysis through critical thinking in the resolution of technical problems that face an evolving society, whether through new discoveries or the development of innovative ideas, theoretical refinements, constructive critiques, and syntheses of existing knowledge.
For the MPhil. programme, it is highly desirable that a research proposal emerges as the result of a process of consultation between the candidate, supervisor, and Industry where applicable.
The end of the research should produce a statement: a publication, a conference presentation, a patent, a technology or some other results produced to standards and conventions as judged by national and international systems.
To further encourage learning approaches that deepen critical thinking and problem-solving skills with the ultimate objective of making students have a deeper understanding of the concepts and the principles of the Food and related Industry and thereby gaining mastery in academia and food-related industry or research.
The goal is to train postgraduates for Food industry and careers in Food Research and Academia.
Course Objectives for MPhil. Food Science and Technology in KNUST
The course is aimed at:
- Offering the students a good command of the basic principles of Food Science and Technology and applying this understanding to the growing and dynamic needs of the Food and Beverage Industries.
- Making the students master the role of Food Science and Technology with respect to value addition to raw agro products, industrialization and national development.
- Encouraging students to develop problem-based and learning approaches together with critical thinking skills. The ultimate aim is to consolidate their training in basic science and engineering principles to ameliorate problems that plague the food industries.
